Ingredients:
½ cup (115 g) unsalted butter, softened
¼ cup powdered erythritol (or any granulated zero-calorie sweetener)
1 teaspoon vanilla extract
1 cup almond flour (or fine oat flour)
Pinch of salt
(Optional: add a dash of cinnamon or lemon zest for extra flavor!)
Instructions:
Preheat & Prepare
Preheat oven to 350°F (175°C).
Line a baking tray with parchment paper.
Make the Dough
In a bowl, cream together butter and sweetener until light and fluffy.
Add vanilla extract and mix.
Stir in almond flour and salt until a soft dough forms.
Shape the Cookies
Scoop small portions (about 1 tablespoon each) and roll into balls.
Place on the tray and gently press down with a fork.
Bake
Bake for 8–10 minutes, or until the edges are lightly golden.
Let cool completely — they’ll firm up as they cool and literally melt in your mouth!
