Fresh Fruit Salad with Chia & Mint

Ingredients

  • 1 cup strawberries, halved
  • 1 cup pineapple chunks
  • 2 kiwis, peeled and sliced
  • ½ cup blueberries
  • Fresh mint leaves (for garnish)
  • 1 tbsp chia seeds
  • 1–2 tbsp honey or maple syrup (optional)
  • Juice of ½ lemon

Instructions

1. Prep the fruit
Wash, peel, and cut the strawberries, pineapple, and kiwis into bite-sized pieces.

2. Combine
In a large bowl, gently mix all the prepared fruit and blueberries.

3. Dress it up
Drizzle the lemon juice and honey or maple syrup (if using) over the fruit. Toss lightly to coat.

4. Top and garnish
Sprinkle chia seeds on top and garnish with fresh mint leaves.

5. Serve
Enjoy immediately — best served fresh and chilled.
