Lemon Garlic Roasted Chicken & Potatoes

Ingredients

6 chicken drumsticks (or thighs if preferred)

3 garlic cloves, minced

1 large lemon (zested and juiced)

4 medium potatoes, cut into chunks

2 tbsp olive oil

1 tsp dried oregano (or rosemary/thyme)

Salt and black pepper, to taste

Optional: a pinch of red pepper flakes or paprika for extra flavor

Fresh parsley for garnish

Instructions

Preheat oven:
Heat your oven to 400°F (200°C).

Prep the chicken:
Pat chicken dry with paper towels and place it in a large bowl.

Make the marinade:
In a small bowl, mix together olive oil, minced garlic, lemon zest, lemon juice, oregano, salt, and pepper.

Combine:
Pour the marinade over the chicken and potatoes. Toss well to coat everything evenly.

Arrange for roasting:
Spread chicken and potatoes in a single layer on a baking sheet or roasting pan. Make sure the chicken skin faces up.

Roast:
Bake for 40–50 minutes, or until the chicken is golden brown and cooked through (internal temperature 165°F / 75°C).
Stir the potatoes halfway through to crisp them evenly.

Finish & serve:
Garnish with fresh parsley and a few extra lemon wedges. Serve hot!
