Ingredients

Main Ingredients

  • 1 lb meatballs (homemade or frozen; beef, chicken, or turkey)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 ½ cups heavy cream
  • 12 oz linguine noodles (break in half if needed)
  • 1 ½ teaspoons Cajun seasoning (more to taste)
  • 1 cup shredded pepper jack or mozzarella
  • Salt and pepper, to taste

Optional Toppings

  • Parmesan cheese
  • Fresh parsley
  • Red pepper flakes

Instructions

1. Brown the Meatballs

  1. Heat the olive oil in a large deep skillet or pot over medium-high heat.
  2. Add the meatballs and brown them on all sides until fully cooked.
  3. Remove from the pot and set aside.

2. Cook the Vegetables

  1. In the same pot, add the diced onion and bell pepper.
  2. Sauté for 3 to 4 minutes until softened.
  3. Add the minced garlic and cook for 30 seconds.

3. Add Linguine and Liquids

  1. Pour in the chicken broth and heavy cream.
  2. Stir in the Cajun seasoning.
  3. Add the linguine, pressing the noodles down so they are mostly submerged.
    • Do not worry if the noodles aren’t fully covered; they will soften as they cook.

4. Return the Meatballs

  1. Add the browned meatballs back into the pot.
  2. Bring the mixture to a simmer.
  3. Cover and cook for 12 to 15 minutes, stirring occasionally to prevent sticking, until the linguine is tender.

5. Add the Cheese

  1. Reduce heat to low.
  2. Stir in the shredded pepper jack or mozzarella until melted and creamy.
  3. Adjust seasoning with salt and pepper if needed.

6. Serve

Spoon into bowls and top with Parmesan, fresh parsley, or red pepper flakes if desired.
